What A difference a year makes: Approximately a year ago on May 14, 2009, I got “the letter” when Chrysler was in bankruptcy. From that dark day came wonderful things and we will continue to love life selling Hyundai’s and Kia’s…as well as the extra room it has made for our expanded pre-owned inventory. This has been the best thing to ever happen to me….what looked like terrible timing, has been fabulous with the roll-out of new and improved Kia and Hyundai products (built in the USA) and the acknowledgement in the automotive press of the great quality, fresh styling and reliability of our products.

May Recipe of the month:
I love May and especially how the fish bite like crazy in May. Not too hot yet and a great time to fish. Here is a recipe from my mom…one of the best cooks in the world…Honoring her for Mothers Day in May!!

Mom-N-Billy’s Pecan Encrusted Mississippi Fresh Bass Filets (or substitute other fish)

Catch, filet and remove skin from largemouth bass creating two skinless, boneless filets.
Crush approximately ¾ cup of pecans (for 2 filets) and season crushed pecans with lemon pepper seasoning, regular pepper, garlic powder.

Dampen fish and roll the filets in above mixture.
Pat it in the fish to make sure it sticks.

Put it in the oven 350 degrees for 20-30 minutes then turn oven on Broil for about 5-10 minutes.
Delicious!!!
